Cake Balls

I saw these on a friend's blog and decided to try them. They are super easy, look great, and are fun to eat. You just bake a cake, and let it cool. Break it up into pieces in a bowl, stir in a tub of frosting, and then shape into balls and freeze until firm. Dip in chocolate (I used almond bark because it's less expensive), and then decorate as desired. Mine have chocolate, sprinkles, walnuts and coconut. The coconut ones were amazing with the chocolate cake!!!

Cheesecake


Brian loves cheesecake, so he got one for Father's Day. I used a copy of the "Cheesecake Factory" recipe, and the texture is awesome. Definitely the best cheesecake I've made yet...eveni f it did crack a little.

Update

Graduation

Two of the Graduate Assistants in our office are graduating this week. We are going out to lunch to celebrate with them on Monday. I thought it would be fun to make them a cake.

Egg rolls, Pizza and Cookies

I found a recipe for Taco Egg Rolls. Here they are. They were pretty good. Not amazing.
BBQ Chicken Pizza. This is absolutely divine! And....so easy. What could be better?
Chocolate chip cookies. Nothing special. But I was very pleased with how round they came out.
